Yacon is a Peruvian root vegetable, similar to a parsnip, which contains sugars known as fructo-oligosaccharides. These sugars are not absorbed by the body, making yacon about the best low glycaemic sweetener around, as a 1 on the Glycemic Index. This and stevia are our top recommendations for people who are seeking to avoid sugar completely.
It is illegal to export the whole yacon root out of Peru, which is why it is unfamiliar to us in the West. Plus, until recently, it was outlawed under the EU Novel Foods Act. It was passed for sale in the EU in 2014.
