Ume Su is a traditional Japanese seasoning, reported to date back to the Edo Period in the 1600s. It is growing in popularity around the world for its very unique flavour profile. Its vinegar-like tanginess adds a rich flavour to a wide variety of dishes including salads, dips, vegetables, dressings, for pickling and even as a secret ingredient in cocktails.

"I always reach for this if I'm having a fattier than usual salad. It's salty and tangy but with that unique flavour of fermented sour plums. It's not as sour as the Ume paste, and therefore perhaps not as polarising. I love both, but this is so convenient to add to a salad!"

"Oh gee I love this stuff it’s so delicious!! I just douse steamed veggies in it, or it’s also great in a salad as part of the dressing. It’s salty so you don’t need additional salt, and has an umami vinegar taste. Im also so impressed that it tastes like vinegar without being actual vinegar bcos I generally try and avoid vinegar. I stocked up on several bottles last time I shopped!!"
