Jumbo is an official size and that’s what we use: nice Jumbo Halkidiki olive with the stone replaced by a strip of fiery Jalapeno chilli. Like all our stuffed olives it’s all done by hand as we find you get a much better result that way. Just imagine – hand stuffed. Every single one. In light brine with a little chilli infused olive oil to coat.

All these olives are still marinating. Only recommendation is to consume everything (all the olives and all the oil) within 12 - 18 months and do not refrigerate them. They don't need it - even when opened. The oil is the preservative and also adds to the flavour.
