We love this exceptional basil pesto from Seggiano. Made with Genovese basil — the classic aromatic variety traditionally associated with the Ligurian coast — this pesto is crafted using a careful, low-temperature process that keeps the sauce raw, unpasteurised, and full of fresh basil vitality.
The basil is cultivated using modern organic farming methods and irrigated with pure spring water. Before sowing, the soil is gently steam-treated to naturally eliminate weeds and pests without the need for herbicides or pesticides. Once mature, only the tender top leaves (richest in fragrance and flavour) are hand-harvested and processed within hours to preserve their vibrant aroma.
After careful washing and delicate chopping, the basil is blended with olive oil and traditional ingredients, then kept under refrigeration rather than heat-treated. This preserves the bright, pungent intensity of truly fresh basil, setting this pesto apart from conventional pasteurised sauces.
While inspired by the Ligurian pesto tradition, Seggiano’s pesto is produced in Piemonte, Italy, using the finest Genovese basil to honour the authentic character of pesto alla Genovese.
A beautifully fresh, living-flavour pesto - perfect stirred through warm pasta, spread on crackers, or spooned over vegetables.
