Psyllium is the husk of the plantain seed.
As a mucilaginous seed, it is soothing to the gut lining, so is used to calm the gut and improve motility. However, as a culinary ingredient it is very useful in raw cuisine as a thickening agent which works without the use of heat.
Use it in fruit desserts to set to a sliceable consistency. Use in raw dehydrated breads to make them spongy. Add to a smoothie to thicken without adding too many nuts.
Add 1 teaspoon to a glass of water, stir well, leave for 10 minutes, and watch the water turn to a gel.
As a culinary ingredient, add 1tbsp to 1-2 cups of ingredients in order to thicken and set your sweet and savoury creations without heat.
