Impossible to mimic, this pure vanilla has over 200 elemental chemicals, the main compound being vanillin. Madagascan vanilla has three times as much vanilla, giving it a superior taste & fragrance - which is why it has such a fine reputation.
This vanilla is cured naturally - a process that can takes weeks, then the beans are left for months to fully develop this flavour.
Use the beans whole or split them to get more flavour from the thousands of seeds inside the pods. They will keep indefinitely in a cool, dark place in an airtight container (don't refrigerate).
Vanilla is a fascinating plant, which involves special labour intensive methods of cultivation to get the benefits from its unmistakable aroma and flavour, hence the high price tag. It naturally pairs with chocolate – did you know vanilla is often planted with cacao on the plantations, as the two grow synergistically, the vanilla vine winding round the cacao tree? Vanilla comes from the orchid family, and it is the most popular natural flavouring on the planet.
